Can you get enough healthy fibre from vegetables? Do you need grains? I think you can get enough from veggies, cruciferous ones are full of it: kale, cabbage, broccoli, cauliflower, etc. (I may need to be fact-checked on that list 😁).

I get my fibre through cauliflower rice and the odd Mediterranean salad. I love cauliflower, regular or riced. Rainbow's good too but it's become popular amongst hardcore weirdos as of late, eh hem bomtombadil. Is this combo I made up at the salad to-go counter like a Mediterranean salad? Artichoke hearts, kalamata olives, feta cheese, vinaigrette-marinated diced tomatoes with red onion, cucumber slices. No lettuce.
