I regularly eat pickled cucumbers, pickled mushrooms and marinated red peppers. All delicious and low cal.

Every year just before Easter I make a dozen or so and keep them in a jar in the refrigerator. They are great with beer.

I am pickling red onion and cucumbers in a Tupperware using white vinegar, dill weed, and black pepper. Kept chilled in the refrigerator for a few days, until I can get the mushrooms and shallots to be cooked down in a brown gravy. That will be served with a beef roast cooked in an oven with carrots, white onions, and decorative red, white, and blue potatoes.
I have found that the brown cremini mushrooms cook down to the size of tiny button mushrooms when cooked in the gravy with shallots. So this time it is best to double the amount by using 2 packages of mushrooms instead of just 1 package.
It also takes 2 packets of au jus brown gravy mix.
Can you see the irony in going to the trouble of making my own homemade pickles but taking a shortcut by using packets of dried powdered gravy mix.
