Number of stars and what the color represents. Is there a legend?
I think the number of stars might have to do with number of posts made.
But I have no idea what the colors mean.

Yes, it has something to do with the number of posts made, or rather that posts that are back to back do not count towards your post total, or haven't you noticed that yet...
That is to discourage trolling, the stars, label, and status are also mean't to discourage trolling by establishing a pecking order of those who have made the most posts seeming to be more trustworthy.
In a corporate board room that all looks real good on paper as a solid strategy for discouraging or preventing trolls, although in real life it should be noted that not all trolls break the rules of the terms of service or whatever rules the administrator decides to set for the board or entire site.
Although it kind of is sort of sad that you aren't intelligent enough to have arrived at that assessment on your own.

Is there anyway we can customise them for the site? So instead of 100 posts making you a "full member" it makes you a "shitposter" and 200 posts makes you a "sexy poster" and so and so forth.

I was going to suggest something similar. Keep the stars if you want, but let me designate my member status as "Quality over quantity".
