My current favourite isn't in the poll. That would be Lower Decks.
Overall, it's a tossup between The Original Series and Voyager. Both are comfort viewing. Deep Space Nine goes deep and is probably the best of them (at least in my opinion). Voyager gets my vote for consistency over a long period, and for its setup. Every episode is a reminder of how far they've come.
It doesn't get much better than Deep Space 9 but Voyager makes for gentler rewatching. It's so far removed from the universe that I enjoy its detachment from Klingon/Cardassian/Starfleet politics. Above all else though, I like hanging out with the characters.

I almost checked Strange New Worlds, until I remembered two things: (1) If it weren't for The Original Series, none of the others would exist, and I still love the interplay among Shatner's Kirk, Nimoy's Spock, and Kelley's McCoy; (2) Much as I've enjoyed what I've seen so far of SNW, I absolutely loathe the guy they cast as James T. Kirk. There's just something about him that I find slapable.
So...TOS it is. However, I'm feeling increasingly fond of Deep Space 9--particularly the characters of Odo and Quark and their amusing bickering.

I watched the very first episode broadcasted on NBC of Star Trek and became an instant fan.

I've seen part of the first season and think they did an outstanding job invoking the spirit of the origin. I was skeptical they could, but they got it.

TNG, although I love TOS which I saw during its first run. The first season of TOS is one of the best in all TV history as is about half of the second season stories. VERY influential as it is the basis for almost all modern sci-fi and sci-fi fandom. It's influence cannot be measured. But half the second season and all of the third are almost a total loss, I'm sorry to say.
TNG took a couple of seasons to totally find its feet but 3 thru 7 are all total triumphs.
I am not yet familiar with recent series but have seen 3 seasons of Deep Space 9, 3 of Voyager, 1 of Enterprise, and 1 of Picard, but nothing yet of Discovery, SNW, or any newer. I'll get there. I'm just bingeing my little heart out.

The original series, because it was the first Star Trek show to go where no Star Trek show had gone before, other than the original pilot.
And also and especially because that was the cast that not only got an animated series but more importantly took Star Trek to the movies.
And they earned it. They didn't have it handed to them like all the others that followed, regardless of whether their successors were good or not.
The original series is the Big Bang of the Star Trek universe.

“If the world ever leaves you feeling hopeless, remember that Star Trek was cancelled once, brought back for a season by viewer demand, then cancelled a second time and deemed an utter failure. It then rose from the ashes to became the flagship for all movie and television science fiction, spawning twelve spin-offs, fourteen movies, and enough novels to keep the fires burning through the Long Night. Oh, and inspired new technology, popularized fan fiction, forged the foundation for modern fan culture, and pushed young people to the sciences. A show that was *?&/@!%? cancelled. CANCELLED! So. When it gets bad out there, just…….be Star Trek.” Internet meme by stillboldlygoing
