I know what you're going to say -- just take any old homemade egg nog recipe and leave out the booze, but in terms of spices, most of them call for vanilla and just a little bit of nutmeg, and I'm tasting something more than that in the store-bought stuff.
Having made a fair bit of ice cream, it looks to me like most egg nog recipes are basically just custard ice cream plus some nutmeg (and minus the freezing), but again, that's not what I taste when I drink the store-bought stuff. There's more going on there from a flavor perspective. I can't identify it, but it's definitely more than just vanilla ice cream with a bit of nutmeg. There's almost a hint of umami?
Any ideas what it is or how to replicate it?
