Now when it comes to anime you cannot currently view, top of this list is Moribito: Guardian of the Spirit. Great story line and character development, especially Prince Chagum. Make a mental note, and if you find this available in the future, go for it.

There are a few series that I think everybody ought to watch regardless of them being anime. Monster Death Note Full Metal Alchemist (ideally FMA: Brotherhood but there are reasons to watch both anime versions) Erased Vinland Saga Spy X Family Paranoia Agent Psycho Pass Kino's Journey (either version of the series is fine) Even if you're not full on into anime and its occasionally goofy tropes, there's something interesting and important in each, and some of them are dead serious. Also, Kuroko's Basketball.

I’m not familiar with Japanese anime except Goblin Slayer, which is pretty good. But my favourite animated series is Batman Beyond.
