I strongly disagree with microwaves being a "red flag", they're perfectly fine for certain foods (melted cheese or tea for instance). Hell you can actually make pretty good poached eggs in a microwave with the right technique (much easier than having to make them in a pot with water and vinegar)

Hell you can actually make pretty good poached eggs in a microwave with the right technique (much easier than having to make them in a pot with water and vinegar) It’s great for home use but considered a red flag in a restaurant kitchen because it’s probably indicative of an Applebees in the 90s type situation (I’ve no idea what they’re like or if they still exist today) where everything is precooked at an offsite location, shipped to the restaurants frozen, and then microwaved to order, rather than made to order. It’s just not what you want out of a restaurant experience.
