I am guessing that wherever there are long distance expressways there are regular service centres.
In Australia McDonalds appears to have cornered the market, with KFC and occasional smaller franchises like Coffee Club. McDonalds did their market research and started with good espresso coffee and fast service, but now smaller shops are competing with better coffee, sandwiches, pies.
France does things differently with auto coffee machines, the expensive ones squirting out drinkable coffee and the cheap machines coffee good for degreasing the engine. Where Frence service centres shine is the fresh baguettes. They easily match Subway. What was faintly bizarre was the only McDonalds I saw in an expressway centre. It was separate from the crowds on its own floor and was upmarket with table service, and almost nobody there for the expensive burgers.

That looks vaguely familiar. Here we call them rest stops (answering the OP) and they're much more upscale now (commenting on these pictures). But the ones like Stuckey's were much more fascinating and fun in a homely way and had character.
